This May, Apéritif Restaurant and Pinstripe Bar are bringing their signature flavors and innovative mixology to NIHI Sumba for a weekend of elevated dining, craft cocktails, and immersive experiences. From 23 to 25 May 2025, guests will have the opportunity to learn from the experts, savor exceptional drinks, and indulge in a Chef’s Table dinner – all in one of Indonesia’s most breathtaking destinations of Sumba island.

With Apéritif’s refined European-inspired cuisine and Pinstripe’s creative cocktail craftsmanship, this collaboration intertwines exceptional flavors, great company, and an unforgettable atmosphere. Mention the Sumba 7 ingredients.

The weekend kicks off on Friday, 23 May 2025, with a Mixologist Masterclass for NIHI team members. Led by Apéritif’s expert mixologist Panji Wisrawan, this exclusive training session at Menara is designed to enhance the skills and knowledge of NIHI’s beverage team, enhancing their art of world-class cocktail-making.

On Saturday, 24 May 2025, guests will have the opportunity to step behind the bar for a Mixologist Masterclass with Pinstripe Bar’s experts. This hands-on session at Menara, priced at $250++ per person, offers an interactive experience where participants will learn the secrets behind crafting signature cocktails.

As the sun sets on Saturday evening, Menara transforms into the ultimate cocktail destination with a Canapé & Bar Takeover. Pinstripe’s Panji will take over the bar, serving a specially curated cocktail menu featuring 3-4 signature drinks, perfectly paired with complimentary canapés. Guests will enjoy an elevated evening of craft cocktails.

The festivities continue on Sunday, 25 May 2025, with a relaxed happy hour at NIO Beach Club. Guests can unwind with complimentary wines and beer, soaking in the island atmosphere before the final event of the weekend.

Closing the collaboration is the highly anticipated Chef’s Table by Chef Nic at NIO Beach Club. This intimate Degustation Dinner will feature a specially curated menu, thoughtfully paired with signature cocktails by Panji and a selection of fine wines. Priced at $100++ per person, this special dining experience promises an unforgettable end to the weekend.
