On 11 and 12 April 2025, the celebrated Chef Nic Vanderbeeken, a winner of Travel + Leisure’s Tastemaker 2024, will bring his signature fusion experience that goes beyond the flavours.
Renowned for his progressive approach to cuisine, Chef Nic masterfully blends refined European technique with the bold spirit of Indonesian terroir. His philosophy, “Borderless Food,” lies at the heart of Apéritif’s culinary identity — and this exclusive collaboration brings that vision to Jakarta for the very first time.

An Inspired Menu
Crafted with artistry and intention, each course offers a harmonious interplay of flavours, textures, and visual finesse. The curated experience includes an opulent seven-course dinner menu and a lighter five-course lunch option. Amuse-bouches, mignardises, and thoughtfully paired cocktails crafted by Panji Wisrawan (winner of the Campari Bartender Competition 2019) will accompany each meal, enhancing the narrative of each dish.
Highlights include the Oyster, delicately paired with smoked oyster crème, kemangi, and dabu-dabu; Hamachi, cured and complemented by pomegranate, rica-rica, and daikon; and the Scallop, presented in a refined clam chowder with chive oil and sambal mango. For heartier fare, the Spring Chicken—accented with foie gras, shiitake, and betel leaf—and the Wagyu Beef, slow-cooked with sweet potato curry and kalio sauce, offer a rich and satisfying indulgence. To conclude, the Chocolate & Yuzu dessert delivers a harmonious balance of citrus brightness and caramelia chocolate depth.

The 7-course degustation dinner menu is available at IDR 1,388,000++, and the 5-course lunch set menu is available at IDR 988,000++ per person. A Bar Takeover by Pinstripe at Artesian and Alice

Further elevating the experience, an exclusive bar takeover will take place at Alice Bar on 11 April and at the following night at Artesian Bar Jakarta, featuring the celebrated Pinstripe Bar from Apéritif Bali. Leading the mixology showcase is Panji Wisrawan, a Balinese native and award-winning bartender known for pushing the boundaries of cocktail innovation while honouring Indonesian ingredients and stories.
Guests can look forward to a curated cocktail list that captures the spirit of Apéritif’s approach to mixology. The bar takeover features five inventive cocktails, each priced at IDR 228,000++, blending global spirits with local flair. Highlights include the Tirtha Aperitivo with Karusotju 18, vodka, pandan, and floral soda; Thai Fu Fa, a creamy mix of Thai tea, soy pudding, and vodka; and the bold Dirty Diana, featuring tequila, Italicus, celery, yuzu, and strawberry salt. The Night Shade Negroni reimagines the classic with tamarillo, balsamic strawberry, and cold brew, while the indulgent Thai Ramos Tea offers a creamy, effervescent twist on gin and Thai tea.
