The seven-course format carries two courses that the shorter menu does not. The After Full Moon brings organic chicken with lobster, Jerusalem artichoke purée, kremes and Albufera sauce. The Dark Moon adds a chocolate course with tamarind and almond ahead of the mignardises. For a birthday table, that fuller shape is usually the one to book.

Optional supplements extend the menu further. The Venison Wellington with foie gras, rendang and sweet potato, and Kagoshima Wagyu A5 are both available as additions, as is a cheese platter. A cauliflower course with caviar, oyster gel, crab and sambal matah can be added at the Growing Moon.

Wine pairing is available in seven-course and five-course configurations, matched to whichever degustation the table has taken, and is offered across all menu options, including the vegetarian and vegan degustations. The sommelier team builds the pairings course by course, and adjusts them as the menu changes with the seasons.

Wines are also available by the glass. A Coravin system allows some bottles to be poured in 125ml measures without drawing the cork, which puts a small pour of something rare within reach of a single course rather than a whole evening. Its cocktail list, The Clairvoyant, is built around the life of Miguel Covarrubias, the artist who documented the Harlem Renaissance in New York and later spent time in Bali during the 1930s. Each drink takes a figure or a moment from that story as its starting point, giving a group something to talk about before anyone has even looked at a menu.

Starting at the bar and moving through to the dining room gives the evening two distinct halves, which suits a birthday better than a single seating does.
