Every new moon marks a fresh beginning, bringing a new expression of Apéritif’s tasting menu inspired by the rhythm of the moon.

Some tasting menus evolve with the seasons. At Apéritif Restaurant in Ubud, they evolve with the lunar calendar. First introduced in September 2025, Guided by the Moon enters a new chapter, deepening its exploration of Indonesia’s rich culinary heritage.

This latest chapter goes far beyond introducing a new menu. It feels increasingly rooted in Indonesia, not through literal recreations of regional classics, but through thoughtful interpretations that preserve their emotional familiarity while expressing them through Apéritif’s refined culinary language.

Inspired by Executive Chef Nic Vanderbeeken’s recent travels across Eastern Indonesia, and shaped by conversations with local communities as well as his own kitchen team, the menu reflects a growing curiosity about the country’s regional cuisines. Rather than documenting those journeys, however, each dish offers its own interpretation of memory, craftsmanship, and contemporary technique, inviting diners to experience Indonesia through a fresh and thoughtful perspective.
