An evening where fine dining meets purpose, Return to Roots brings together Apéritif, Locavore NXT, and Syrco BASÈ for a one-night-only charity dinner in support of the Sumba Hospitality Foundation.

Each restaurant will be represented by talented chefs from Sumba, cooking side by side in a celebration of heritage, gratitude, and community.
Guests will enjoy curated snacks, a six-course dinner by Apéritif, and a moving “Silence Action” moment symbolising unity and purpose.

After dinner, continue the evening at Pinstripe Bar, and raise a toast to celebrate Sumba’s spirit.

The evening will also feature an exclusive auction, with 100% of proceeds donated to empower Sumba’s youth through hospitality education and sustainable living.

Chef Nic Vanderbeeken has over 20 years of experience leading teams in fine dining and Michelin Star restaurants. He is the current executive chef at Apéritif Restaurant based in Ubud, Bali and is known for his progressive and multifaceted cooking philosophy.
