Apéritif Collaboration with Michelin Chefs
Apéritif Restaurant has collaborated with Michelin-star chefs worldwide to bring the best global cuisine to Bali. On July 23rd, 2022, Apéritif Restaurant hosted a special dinner with Michelin-starred chef Benoit Dewitte; Chef Dewitte collaborated with his lifelong friend, Executive Chef Nic Vanderbeeken, to create an 8-course degustation featuring an eclectic mix of traditional Balinese ingredients. The night started with a glass of Taittinger Champagne upon arrival, followed by dishes that blew diners away with their creativity and unique flavors.
On December 4th, 2022, the restaurant hosted a three Michelin-star dinner event with Chef Julien Royer from Odette Singapore, who collaborated with our Chef Nic Vanderbeeken. Diners enjoyed a degustation experience featuring dishes like the ‘Balinese Garden; A Walk Into The Last Paradise’ using only local vegetables and herbs, or the Sumatran Crab with its Jicama and Citrus Gel. The eight course menu pushed Indonesian culinary boundaries with unconventional twists and pairings.
