UBUD, BALI, xx JUNE 2019 – Apéritif, a fine dining restaurant and bar that showcases the best of global eclectic cuisine, is set to host Chef Bradley Kilgore of Miami’s Alter restaurant for a four-hands dinner collaboration on 29 June 2019.
Chef Bradley, a rising star of the New American movement, will collaborate with Apéritif’s Executive Chef Nic Vanderbeeken for a sophisticated eight course degustation dinner that will showcase the best of their respective cuisines and culinary philosophies. Chef Bradley’s terroir-driven dishes explores and reveals the scope of Miami’s produce and diverse food culture, all ensconced in a sexy, contemporary setting. Similarly, Chef Nic seeks to showcase the best Balinese and Indonesian produce, without compromising on delivering the best tasting menus. Incorporating familiar flavours found within different cultures, Chef Nic deftly navigates his way through Indonesian nuances that epitomises his brand of global eclectic cuisine.

Chef Bradley opened his much-lauded tasting menu-only restaurant, Alter in the summer of 2015. Offering Progressive American cuisine that highlights indigenous Floridian ingredients, he quickly became a critic’s favourite having received four out of four stars from The Miami Herald, Best New Chef by Food & Wine magazine, and Restaurant of the Year by Eater
From there, Chef Bradley has created a restaurant group, Kilgore Culinary. The group runs restaurants including Kaido, an Asian and Japanese-inspired cocktail lounge; Ama, a hidden bar offering an omakase experience; and the group’s newest addition, Ember, a wood-fired American bistro focusing on classic and modern fare. Prior to opening his own restaurant, Kansas-born Chef Bradley has worked at world-renowned restaurants such as Alinea, L2O and Boka.
The two chefs will collaborate for a one-night-only exceptional dinner that combines an unparalleled dining experience with the best ingredients from Indonesia and beyond.
